A delicious dessert that is simple to make! Small pieces of strawberries sprinkled with bits of home-made meringue covered with whipped cream and topped with a strawberry coulis… Serve in a dish or restaurant-style in verrines. If you do not want to prepare the meringues yourself, you can buy them at a pastry shop!

  • 60 g of light brown cane sugar
  • 70 g icing sugar

  • 1 tablespoon of icing sugar

1Prepare the meringues

Separate the egg whites. Use an electric mixer to beat the egg whites to a white foam. Continue beating while adding the cane sugar little by little until you obtain very firm peaks. Now, using a spatula, gently incorporate the icing sugar into the beaten egg white by lifting the mass from the bottom to the top. Pre-heat the oven to 90°C. Cover a baking pan with baking paper. Use a large spoon to make little heaps with the meringue and place them on the pan. Place in the oven and allow it to cook for 1 1/2 hours. Remove the meringues and let them cool.

2Prepare the whipped cream

Using a salad bowl, whip very cold cream until it thickens. Add the icing sugar and whip again.

3Prepare the strawberries and the coulis

Rinse the strawberries under cold water. Use the kitchen knife to hull the strawberries and cut half of the strawberries into quarters. Remember to use the finger guard to avoid cutting yourself! Press the lemon to obtain the juice. Mix the remaining strawberries with the lemon.

4Arrange on the dish

Place small pieces of strawberry in the centre of the dish. Cover them with whipped cream. Then crumble the meringue on top, add a few strawberries and pour the coulis on top. Yummy! Now it’s time to treat yourself!

Do you love meringues and whipped cream? You won’t find strawberries in winter because it is not the season. You can replace them with little pieces of pineapple. You can also make the coulis with passion fruit. Use your knife to cut open 2 pieces of passion fruit and remove the pulp with a small spoon. Place it in a small saucepan with 2 tablespoons of light brown cane and cook for 2 minutes at low heat while stirring. Let cool before serving.
